Cannabis Steak Recipe:

Ribeye Steak with a Brown Butter Garlic Finishing Sauce


Serves: 2


Ingredients

  • 2 ribeye steaks - approximately one inch thick

  • 2 tablespoons of cannabutter

  • 2 tablespoons of regular butter

  • 4 cloves of garlic minced or thinly sliced

  • 2 sprigs of fresh rosemary

  • 2 sprigs of fresh thyme

  • salt and black pepper to taste

  • 1 tablespoon of neutral high smoke point oil such as avocado or grapeseed oil for searing.


Instructions

  1. Prepare the Steaks - Remove your ribeye steaks from the refrigerator at least 30 to 45 minutes before cooking. Bringing the steaks to room temperature ensures more even cooking throughout. Pat them completely dry with paper towels, this is critical for achieving a good sear. A wet steak will steam rather than sear and you will lose the beautiful golden brown crust that makes a great ribeye so satisfying. Season generously on both sides with salt and black pepper. Do not be shy with the seasoning; a thick ribeye needs more than you think.

  2. Get the Pan Screaming Hot - Place a heavy bottomed cast iron skillet or stainless steel pan over high heat and allow it to get extremely hot; this takes at least 2 to 3 minutes. Add your tablespoon of oil and allow it to heat until it just begins to smoke. This high heat is what creates the Maillard reaction, the chemical process responsible for the deeply browned, flavorful crust on a perfectly seared steak.

  3. Sear the Steaks - Carefully place the seasoned ribeyes in the hot pan away from you to avoid oil splatter. Do not move them. Allow them to sear undisturbed for 3 to 4 minutes on the first side until a deep golden brown crust has formed. Flip once and sear for another 3 to 4 minutes on the second side for a medium rare result. Adjust timing based on your preferred doneness and the thickness of your steaks.

  4. Make the Brown Butter Garlic Sauce - Reduce the heat to medium low. Add the two tablespoons of regular unsalted butter to the pan along with the garlic, rosemary, and thyme. As the butter melts it will begin to foam and then the foam will subside as the milk solids begin to toast and turn golden brown. Tilt the pan slightly and use a spoon to continuously baste the steaks with the foaming butter and aromatics. Watch the butter carefully, it goes from brown butter to burnt butter quickly, and you want to catch it at that perfect golden nutty stage.

  5. Rest the Steaks - Remove the steaks from the pan and place them on a cutting board or plate to rest for at least 5 minutes. Resting allows the juices to redistribute throughout the meat rather than running out when you cut into it. Do not skip this step, it is the difference between a juicy and a dry steak.

  6. Add the Cannabutter - This is the critical step for preserving your cannabis potency. Remove the pan from the heat entirely and allow it to cool for 1 to 2 minutes. The pan should still be warm but no longer actively cooking. Add the two tablespoons of cannabutter to the pan with the existing brown butter, garlic, and aromatics. Stir gently until the cannabutter is fully melted and incorporated into the sauce. The residual heat of the pan is enough to melt the cannabutter without destroying the THC.
