These cheesy bacon baked potatoes are infused with cannabutter and make a perfect side dish to any steak, chicken thigh dinner, or with a bowl of chili on a cold February night. These cannabis cheesy bacon potatoes will warm your heart and cannabis soul.

Cook Time: 1 hour 30 minutes
6 medium potatoes, washed and dried
2 tablespoons oil
3 tablespoons cannabutter
3/4 cup diced bacon, cooked
2 cups shredded cheddar cheese, divided
1/4 cup grated onion
1 tablespoon salt
2 cups sour cream
1 teaspoon ground black pepper
Preheat the oven to 400F/200C.
Coat the potatoes with the oil and sprinkle with the salt.
Bake the potatoes on a baking pan on the center rack in the oven and bake for 1 hour or until a knife is easily inserted into the potato.
Remove the potatoes from the oven and allow to cool on a baking rack until they are cool enough to handle. Reduce the oven temperature to 340F/170C.
Once the potatoes have cooled and cut out the center of each potato and scoop out the potato and skin. Place the potato scoops into a bowl and add the cannabutter.
Blend the potato centers with a masher.
Add the bacon, 1-1/4 cups of cheese, onion, salt, sour cream, and pepper to the potato mash and blend well. Adjust seasonings as needed.
Spoon the mashed potatoes into the potato skins and place on a baking pan.
Once all of the potatoes have been filled cover the baking pan with foil and bake for 15 minutes.
Remove the foil and sprinkle with remaining cheese, bake covered with foil until the cheese has melted.
Serve the cheesy bacon baked potatoes with extra sour cream, green onion, and more bacon!
