This recipe was love at first bite for me, and the fact I can make this without using the oven in the summer is a definite win.
Prep Time: 30 minutes
1 cup heavy whipping cream
1 cup mascarpone cheese, room temperature
⅓ cup sugar
1 tablespoon vanilla extract
1 tablespoon Amaretto or Brandy, optional
2 cups espresso or coffee
4 tablespoons cannabis butter
1 pack ladyfingers
Cocoa powder, for garnish
Brew coffee and add the cannabis butter, allow to cool to room temperature.
Beat the whipping cream, sugar, and vanilla until soft peaks form.
Add mascarpone cheese and liquor.
Continue to whip to stiff peaks.
Once the coffee and cannabutter mixture reaches room temperature quickly dip the ladyfingers in the cannabis-coffee mixture and place it in an 8×8 pan to make the first layer.
Spread half of the whipped cream mixture on top of the first layer of ladyfingers. Repeat process with the second layer of ladyfingers and cream mixture.
Dust the top of the tiramisu with cocoa powder using a sieve or sifter.
Refrigerate for about 3 hours before serving.
