These coconut shrimp are fried to sweet coconut and rum perfection! Substitute the rum for water if necessary.

1/2 cup flour
1/2 teaspoon salt
1/4 cup coconut rum (optional)
1 cup sweetened coconut flakes
1/2 cup panko
1-pound large shrimp
In a large pan over medium-low heat, melt the cannabutter.
In a small bowl, mix together the flour and salt.
In a small bowl, whisk the egg and rum together.
In a separate small bowl, combine the coconut flakes and Panko bread crumbs.
Dip each shrimp in the following order flour, then the egg and rum mixture, and finally the coconut and Panko to coat.
Space the coated shrimp evenly in the hot pan. Allow to cook until browned on one side and flip. Cook an additional 4 or 5 minutes or until cooked thoroughly. Do not overcook as the shrimp will become tough.
Recipe Notes: The rum may be substituted for water.
