Baked Plum Pie Recipe

Baked plum pie makes the most out of the summer harvest of plums with the harmonizing flavors of nutmeg and cinnamon.  Try serving with a scoop of your favorite ice cream!



Prep Time: 30 minutes 

Cook Time: 1 hour 

Serves 8



Ingredients:


  • 3 cups all-purpose flour 

  • 3/4 cup white sugar 

  • 2 1/2 teaspoons baking powder 

  • 1/8 teaspoon salt 

  • 2/3 cup cannabutter

  • 2 eggs 

  • 1 tablespoon vanilla extract 

  • 3 tablespoons milk 

  • 1/2 teaspoon lemon zest 

  • 3 tablespoons butter 

  • 5 cups plums, pitted and sliced 

  • 1 cup white sugar 

  • 1/4 cup all-purpose flour 

  • 1 teaspoon ground cinnamon 

  • 1/2 teaspoon ground nutmeg 



Directions:


  1. Preheat oven to 340F. 

  2. To prepare the crust: In a large bowl add 3 cups flour, 3/4 cups white sugar, baking powder, and 1/8 teaspoon salt. Mix thoroughly then cut in the cannabutter with a pastry blender until the mixture forms small pea-size pieces.  Add in the eggs, vanilla extract, milk, and lemon zest. Mix just until combined and refrigerate the dough for 1 hour. 

  3. To prepare the plum filling: In a small bowl add the remaining sugar, flour, cinnamon, and nutmeg until thoroughly combined.

  4. In a large bowl add the pitted and sliced plums and the seasoned sugar mixture.  Gently mix until the plums are well coated. 

  5. Roll out pie crust and place in a 9-inch pie pan.

  6. Trim and flute edges, then pour in the fruit filling.  

  7. Bake for 50 minutes or until the crust and plums are golden brown.

  8. Serve warm or at room temperature.
